Banana Bread is a great comfort food – it makes me feel right at home. This recipe is super easy, I’ve been making it for years. Anyone who’s tried it loved it so hopefully you will too.
Ingredients:
1 tsp. salt
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
2 eggs, at room temp
1 cup white sugar
4 ripe bananas, mashed
1 tsp. vanilla extract
1/2 cup canola or vegetable oil
1/2 chopped walnuts, optional
Preheat the oven to 350 degrees. Combine the dry ingredients in a bowl and set aside.
In a food processor, stand mixer or by hand, combine the sugar and eggs until pale in color. Add the bananas, vanilla and oil. Then fold in the flour mixture by thirds. Mix everything just well enough to combine it. Do not overmix the batter! You are looking for an airy texture, not a brick = )
Add walnuts (optional).
Grease a loaf or bundt pan and pour in batter. Bake for 40-60 min, or until an inserted toothpick comes out clean. A bundt will cook faster than a loaf. Let cool for 10 min before removing from pan.
