If you’re looking for a fast and simple way to turn a head of cabbage into a flavorful side dish, this air fryer method may be your best bet. There’s very little chopping involved and the cabbage needs only about 12 minutes of cooking time. That makes it a win-win in my book.
This air fryer cabbage is smothered in a garlic, miso, and mustard glaze, resulting in super flavorful wedges that can compliment almost any main course.

Key Ingredients + Substitutions
- Cabbage: Standard green cabbage works best here.
- Miso: This Japanese soybean paste adds salt, umami, and a ton of flavor to these cabbage wedges. Look for it in the supermarket (or in Asian markets) in the refrigerated section near items like tofu, kimchi, etc. If you can’t find it, substitute with a tablespoon of soy sauce plus a tablespoon of nutritional yeast.
- Garlic: For a shortcut, use a tablespoon of jarred pre-chopped garlic.
- Mustard: I like whole grain mustard for its texture, but you can sub with brown or Dijon mustard.

Step 1: Make the Glaze
In a small bowl, stir together miso, mustard, garlic, olive oil, salt, and pepper.
Step 2: Brush the Cabbage Wedges
Preheat your air fryer to 350ºF. Depending on the size of your air fryer basket, you may need to cook these in two batches, as shown here.
Using a silicone brush*, generously slather one side of each wedge with the glaze. Place glazed-side down into the basket and slather the top-facing side.
*If you don’t have a brush, use your hands or a regular spoon to massage the glaze into the cabbage.
Step 3: Cook the Cabbage
Place in the air fryer and cook until the outsides of the cabbage are nicely browned, about 12 minutes. There is no need to flip the wedges.
Recipe Tips
- Be sure to keep the stem end of the cabbage intact; this will help your wedges hold their shape.
- Cook your cabbage in a single layer so that hot air can circulate around each wedge and make it crispy. Do not pile the wedges atop one another.
- Keep an eye on your cabbage, starting to check on it after about 10 minutes. All air fryers are a little different so pay attention so your cabbage burn.
- Please note that this cabbage does not turn out super soft; it will still have a decent amount of texture in the center. In order to become silky, cabbage typically needs to be cooked in a moist environment (i.e. braised) and at a low temperature for a long time.
How to Make This Without an Air Fryer
You can totally cook these cabbage wedges in the oven, too. Just note they won’t be quite as crispy. Roast the wedges in a preheated 425ºF oven on a parchment paper-lined baking sheet for 15 minutes. Then flip, and cook for another 10 or so minutes.
Serving Suggestions
Air fried cabbage is best eaten the same day as it’s made. Leftovers will be fine for a day or two, but the cabbage will lose its crispy edges.
I love to serve this with white bean purée or celeriac purée. It would also be fabulous alongside mushroom bourguignon or with mujadara.

Ingredients
- 3 medium garlic cloves, minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon whole grain mustard (brown or Dijon also work)
- 1 tablespoon white miso (“shiro” miso)* [see note below]
- 1 tablespoon mild vinegar, like champagne, white wine, or apple cider (lemon juice also works)
- Fine sea salt + freshly ground black pepper
- 1/2 medium head green cabbage, cut into 4 wedges
Instructions
- In a small bowl, combine the garlic, oil, mustard, miso, and vinegar with pinches of salt and pepper. Stir to incorporate.
- Preheat the air fryer to 350ºF.
- Generously slather the garlic mixture on one side of a cabbage wedge. Place the wedge in the basket seasoned-side down, then slather the top-facing side. Continue with the other wedges. If your wedges can’t all fit in the basket in a single layer, you’ll need to cook them in two batches. Do not pile them atop one another.
- Cook the wedges until they are nicely browned, 12 to 14 minutes. Serve immediately.
Notes
If you don’t have miso, substitute with a tablespoon of soy sauce plus a tablespoon of nutritional yeast.
