You'll need... -baby eggplants -olive oil -white miso -soy sauce -sesame oil -pure maple syrup -garlic -scallions -sesame seeds
Start by cross-hatching the eggplant
Brush with olive oil
Air fry for about 12 minutes, until golden brown
Mix up the miso glaze
Brush on the eggplants + air fry for 2 more minutes
Sprinkle with scallions + sesame seeds + serve!
