Goooood morning, world! While many of you are undoubtedly still in bed basking in the glow of today’s federal holiday, I have been hard at work for several hours working on the download of my very first e-cookbook! (There is no rest for the self-employed).
I am so freakin’ excited to share this e-book with you. This is a project I’ve been working on for several months and I must say, I’m pretty thrilled with the result. The idea for the book came from my desire to share the tips, tricks and recipes I’ve picked up over the years on the topic of – you guessed it – weeknight cooking. If you’ve been reading my blog for a while, you probably know this is something I am really passionate about. It is also a topic people often ask me for advice on.
Après-work cooking can be a real challenge – we’re tired, we’re hungry, we’re quite often pissed off, and we need to ingest something ASAP. But if you don’t have basic ingredients stocked in your kitchen and simple cooking skills at your disposal, the prospect of ordering in is just so, so attractive. My goal with the ten recipes in this book is to show that healthy weeknight cooking is totally doable, and that keeping a stocked pantry and learning a few key techniques can add major brownie points (no pun intended) to the quality of your life.
A few of the recipes you’ll find inside are Chipotle Chickpea Tacos with Guacamole and Shaved Purple Cabbage, Udon Noodles with Shiitakes and Kimchi, Lazy Lasagna with Vegetables, and many more. There’s also a warm fuzzy introduction dedicated to my main inspiration – my mom – as well as the story of why this topic is so important to me.
