A pandemic really changes your perspective on cooking, doesn’t it? Whereas cravings usually dictate my answer to what’s for dinner, as of this week, my approach is a bit different. These days when I ponder that question, I have to think strategically about what’s in the fridge, freezer, and cupboards, and what are the best ways to combine all those items – without wasting anything – over the next couple of days and weeks (hopefully not months…).
The criteria of seasonality, and getting fresh fruits and vegetables into every meal, are temporarily suspended. For now, it’s all about being creative with what you have and making something as delicious and comforting as possible. And to be honest, I’ve actually been enjoying the challenge.
So let’s talk beans. Although at my house we eat beans on a regular basis, it seems right now more people are eating beans than ever before (as evidenced by the empty Goya display at our local supermarket). And that makes me happy! Beans are super good for you and can be used in just about a bijillion and a half ways.
